Parsley root is an easy-to-grow root vegetable with mixed flavour of celeriac and carrot with a hint of celery, turnip and parsley leaves. It will make a great addition to soups, stews, and as a roasted side to meats.

 Sowing: Sow the seeds thinly in 1cm (½in) deep drills and cover lightly with soil. Keep moist but do not overwater. Thin out the seedlings when large enough to handle, to 15cm (6in) apart.

Tip: Parsley root seeds can be soaked in warm water to help germination.
